Slow Cooker Beef and Potato Stew

Directions

  1. Add beef, potatoes, carrots, onion, and garlic to the slow cooker.
  2. In a bowl, whisk together beef broth, tomato paste, thyme, salt, and pepper.
  3. Pour the broth mixture over the ingredients in the slow cooker.
  4. Cover and cook on low for 8–10 hours, until the beef is tender and the potatoes are fully cooked.
  5. About 15 minutes before serving, sprinkle shredded cheddar cheese on top and let it melt.
  6. Garnish with fresh parsley before serving hot.
