Cajun Corn on the Cob

Ingredients
For the Corn & Seasoning

Instructions

  1. Mix Oil and Spices: In a small bowl, combine olive oil, half the Cajun spice, half the smoked paprika, onion powder, garlic powder, salt, and pepper. Save any extra for brushing later.
  2. Season and Wrap Corn: Place each husked ear of corn on a piece of foil. Brush generously with the spice-oil mix, then wrap tightly.
  3. Bake the Corn: Place the foil-wrapped corn in the oven at 425°F (220°C) for 30 minutes.
  4. Optional for Softer Corn: For extra tender corn, unwrap after 30 minutes, brush with more spice oil, rewrap, and bake an additional 20–25 minutes.
  5. Prepare the Mayo Sauce: While corn bakes, mix mayonnaise, sour cream (or crema), the remaining Cajun spice, smoked paprika, lime juice, salt, pepper, and optional chili powder.
  6. Finish the Corn: Once baked, let the corn cool slightly. For a charred effect, place on a grill pan over medium-high heat, turning until lightly charred.
  7. Add Toppings: Brush the corn with mayo sauce, then top with crumbled cheese, cilantro, and a sprinkle of Cajun spice.
  8. Serve Warm: Enjoy immediately while the corn is smoky, creamy, and packed with flavor.
