Instructions

  1. Preheat Oven & Prep Pan: Heat oven to 375°F (190°C). Grease a 9×5-inch loaf pan and line it with parchment, leaving an overhang for easy removal.
  2. Mix Wet Ingredients: In a large bowl, beat sugar and eggs until pale and fluffy. Slowly drizzle in the oil while mixing. Stir in the pureed strawberries and vanilla extract until combined.
  3. Mix Dry Ingredients: In another bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
  4. Combine Wet & Dry: Add the dry mixture to the wet batter along with sour cream. Gently fold until no streaks of flour remain, being careful not to overmix.
  5. Bake the Bread: Pour batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool Before Glazing: Let the loaf rest in the pan for 5 minutes, then lift it out using the parchment overhang. Cool on a wire rack.
  7. Make the Glaze: In a small bowl, whisk powdered sugar with lemon juice until smooth.
  8. Finish & Serve: Drizzle the glaze over the slightly warm or cooled loaf, then sprinkle with crushed freeze-dried strawberries. Allow to fully cool before slicing.
