Oatmeal Scotchies
Ingredients:

Instructions:

  1. Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until blended. Set aside.
  2. Cream butter and sugars: In a large bowl, beat the butter, brown sugar, and white sugar with an electric mixer until light and creamy.
  3. Add wet ingredients: Mix in the eggs, molasses, and vanilla extract until everything is smooth and well combined. Be sure to scrape the sides of the bowl as needed.
  4. Combine mixtures: Gradually add the dry ingredients into the wet mixture, mixing on low speed just until combined. Avoid overmixing to keep the cookies tender.
  5. Fold in oats and chips: Stir in the oats and butterscotch chips until evenly distributed. The dough will be thick and hearty.
  6. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. Chilling helps the dough firm up, making it easier to work with and keeping the cookies from spreading too much.
  7. Preheat oven and prep sheet: Heat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Shape and bake: Scoop about 1.5 to 2 tablespoons of dough for each cookie, roll into balls, and place on the prepared sheet, leaving space for spreading. Bake for 11–13 minutes until the edges are golden and the centers are just set.
  9. Cool before serving: Let the cookies rest on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. This step helps them stay intact.
